Moroccan organic vegetables and paneer

Ingredients
  • 2 garlic cloves, crushed
  • 2 inches ginger crushed
  • 1 teaspoon coarse salt
  • 1-2 teaspoons toasted cumin seeds, crushed or ground
  • 1 teaspoon of coriander seeds
  • 2 tablespoons sesame seeds
  • 1 fresh red chile,seeded, crushed or finely chopped
  • 1 freshly squeezed lemon juice
  • 4¬†tablespoons olive oil,
  • 2 teaspoons of honey
  • Small bunch of coriander, crushed or chopped
  • 200g fried paneer cubes

Method

  • Crush garlic and ginger
  • Mix all ingredients excluding carrots and aubergine in a bowl
  • Roughly chop the carrots to 2 inch sizes
  • Slice the aubergines into thick chunks
  • Place the vegetables in a roasting pan and cover with the marinade and roast for 45 minutes in a 220c oven.
  • Serve with chopped fresh coriander and yoghurt
