Organic Butter Paneer with Jeera Aloo

Ingredients

Butter Paneer

  • 250 grams of paneer cheese (can be home made with organic milk or bought at most supermarkets
  • 2 tablespoons of organic cashew butter (you can blend x3 tablespoons of cashew nuts after soaking them in boiling water for 10 minutes and blending or crushing in a pestle and mortar).
  • 1 tin of organic tomatoes (the Suma cherry tomatoes are divine) chopped or blended
  • 2 chillies with the seeds removed and diced.
  • 1 inch organic ginger and 3-4 garlic cloves - crushed or ground in a mortar & pestle
  • 2 bay leaves
  • 3 curry leaves
  • 1 tsp garam masala
  • ½ tsp red chili powder
  • 1 tablespoon oil + 1 or 2 tablespoon butter
  • 1.5 cups water
  • Coriander leaves for garnishing (optional)
  • Himalayan or rock salt and sweetener (agave, rice syrup, honey) as desired.

Jeera Aloo

  • 5-6 medium size potatoes, boiled
  • 2.5 tsp cumin seeds
  • ¼ cup chopped coriander leaves
  • 2 to 3 green chilies, chopped
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • 3 to 4 tsp lemon juice or add as per taste
  • 3 tablespoon oil
  • Himalayan or rock salt for taste

Measuring cup used, 1 cup = 250 ml

Method

Butter Paneer

  • Heat the oil and butter in a pan. Add the bay leaves and fry for some 10-15 seconds or until the oil become fragrant.
  • Add the ginger-garlic paste and fry till the raw aroma disappears.
  • Add the tomato puree and stir well. Add red chili powder after 2-3 mins and stir again. saute till the oil starts to leave the sides of the tomato paste.
  • Add the cashew paste and stir well. Saute the cashew paste till the oil begins to leave the sides of the masala paste.
  • Add water and stir. Then simmer on a low flame.
  • Add the paneer cubes and cook them for 2-3 minutes till they become soft.
  • Don't cook for too long a time as the paneer will become dense.
  • Lastly add curry leaves & garam masala and stir.
  • Garnish paneer butter masala with coriander leaves

Jeera Aloo

  • Peel the boiled potatoes and cut into cubes.
  • In a pan heat the oil.
  • Add the cumin seeds and let these sizzle in the oil.
  • Now add the green chilies and fry for a minute.
  • Add the potato cubes and mix it well with the cumin seeds and chilies.
  • Sprinkle the turmeric powder, red chili powder and rock salt.
  • Saute the potatoes for 2-3 minutes.
  • Add the lemon juice and chopped coriander leaves.
  • Mix the whole mixture well for a minute.
  • Serve the jeera aloo hot.
