Organic Ribston Pippin Apple and Pomegranate Crumble

Ingredients

Filling

  • 4 cups of organic ribston Pippin apples
  • 2 cups of organic pomegranate
  • 1 Zest and Juice of a lemon
  • 2 teaspoons of organic ground cinnamon
  • 4 tablespoons of organic unrefined sugar

Topping

  • 1.5 cups of organic jumbo oats
  • 2 tablespoons of organic ground ginger
  • 100 grams of butter or coconut oil
  • 1.5 cups of organic plain or wholemeal flour
  • 0.5 cup of organic omega mix seeds (pumpkin, sunflower, sesame, linseed)
  • 1.5 cups of organic coconut palm sugar
  • Pinch of salt

  • Slice the apples removing the cores and mix with the lemon, pomegranate seeds, cinnamon and sugar in a plastic bowl. Place filling in a baking dish ready to take the filling. Preheat a standard oven to 180 degrees centigrade. Mix all the ingredients for the topping in a separate bowl and with your hands make the butter, flour and seeds become like breadcrumbs. Evenly spread over the filling and BAKE!
