It may have been one of the last really warm days of summer last weekend, so we thought a healthy and light lunch was in order. We added a few extra mushrooms that were left over but it’s entirely up to you. It was super easy and it was ready in around twenty minutes. As always, all ingredients are available from Shipley Health Store.
- Prepare the dressing by combining the olive oil and balsamic vinegar, a little salt and pepper. I like to prepare this in a used jar with a lid so it can have a good shake to combine the ingredients.
- Add the apple, clementine and red onion to a bowl then squeeze the juice of half a lemon. Make sure all ingredients are covered then leave to sit for ten minutes.
- Then add the washed spinach to a bowl. Top with fruit and onion mixture, the pomegranate seeds and walnuts then drizzle with dressing. Serve immediately.
